Spectrophotometric detection was performed in order to characterize and to quantify phenolic compounds, Hydroxycinnamic Tartaric Acids (HCTAs), Flavonols and Anthocyanins, in berry skin of four different red Vitis vinifera L. varieties, (Alicante, Black Malvasia, Nerello and Prunesta), cultivated in the Reggio Calabria province (South Italy). Five samplings were conducted during ripening, at weekly intervals. The evolution of these phenolic fraction has been monitored by separating the phenols into different classes by SPE. The adsorbing resin Serdolit XAD-2 was employed. This approach provided good performance in terms of linearity, accuracy and precision. Grape skin showed to be rich in phenolic components and especially in anthocyanins whose content increased during ripening, being maximum at commercial ripeness of grapefruit.
E’ stata utilizzata la spettrofotometria per caratterizzare e quantificare composti fenolici quali: Acidi Idrossi Cinnamil Tartarici, Flavonoli e Antocianine, nelle bucce di quattro varietà rosse di Vitis vinifera L. (Alicante, Malvasia nera, Nerello e Prunesta), coltivate nella provincia di Reggio Calabria (Italia Meridionale). Sono state eseguite cinque campionature durante la maturazione, a intervalli settimanali. E’ stata monitorata l’evoluzione di queste frazioni fenoliche, separando i fenoli in classi differenti mediante SPE. E’ stata utilizzata la resina Serdolit XAD-2. Ciò ha consentito buone prestazioni in termini di linearità, accuratezza e precisione. Le bucce degli acini hanno mostrato di essere ricche in componenti fenolici e specialmente in antocianine il cui contenuto aumenta durante la maturazione, mostrando il massimo alla maturità commerciale dell’uva.
