A study was carried out on the sterolic, erythrodiol and uvaol content of 15 olive cultivars growing in the Calabria Region (Southern Italy): Cassanese, Coratina, Frantoio, Itrana, Leccino, Nocellara messinese, Nociara, Pendolino, Picholine, Roggianella, Tonda iblea, Ottobratica, Sinopolese, Geracese and Carolea. It was determined that all the studied oils in question comply with the quality values of the E.U. (European Union) and I.O.O.C. (International Olive Oil Council) regulations for olive oils, given that the Carolea cv., is the one with the highest total sterol content and the highest total b-sitosterol percentage.

Abstract
