La plaine de Gioia Tauro est située du coté tyrrhénien de la Province de Reggio Calabria, le sud d’Italie. Dix cultivars italiens (3 autochtones calabrais: Cassanese, Ottobratica et Sinopolese et 7 allochtones: Coratina, Itrana, Leccino, Nocellara messinese, Nociara, Pendolino et Picholine) ont été cultivés dans cette plaine et ils ont été destinés à l’extraction de l’huile d’olive. La récolte a été effectuée chaque 15 jours, pendant toute la durée de la saison oléicole et ce, pendant trois années successives. Le but de cette étude est de mettre en évidence la composition en stérols de ces différents cultivars ainsi que l’influence de la date de récolte aux différents composés stéroliques.
